Nickey’s Simple Yellow Cake

An easy, very basic cake; I don't think you can hurt it. I've tried it with different extracts, alone and in combination, with candie sprinkles in it, and with cookie crumbs (Nickey's icebox butter cookie) layered on the bottom, incorporated within, and sprinkled on top ... all turned out fine:) -- posted by marisk

Nickey’s Hijiki

Hijiki, a versatile seaweed, very high in fiber. Soaking increases the dried volume of hijiki by about three times (or more). Hijiki should be rinsed to remove any sand and/or other debris. One cup of dried hijiki will become three cups when soaked. Hijiki, being fairly neutral in flavor, can be added to salads, stir fries and other dishes. All the vegetable add-ins are optional. -- posted by marisk

Low-Cholesterol Recipes: Ceviche | Submitted By: Star Pooley

This recipe is a staple in Mexico. Raw seafood is cooked by the lime juice! Now don't wrinkle your nose! You would never know the seafood was not cooked prior to serving. Make sure to always use the freshest ingredients! You may substitute many types of seafood for scallops, for example: halibut, red snapper, flounder, or swordfish.

Dairy-Free Recipes: Tan | Submitted By: ALRAYNA

This is a wonderful tangy, sweet, and delicious way to eat apples. I love it with apples, but my mom also does this with strawberries or pears. I've also done this with just one apple for myself when I wanted a quick snack. Pink lady and red delicious apples will also work well.

Diabetic Recipes: Bodega Bay Cioppino | Submitted By: Beth

This stew brings back childhood memories of Northern California and new buckets brimming with crab and baskets of sourdough bread. Rich, red, and very messy, it is now a New Years tradition at my house. Serve in large bowls with sourdough bread on the side. Never any leftovers!
